The Shi drum or Croaker is an aqua cultured fish rich in flavor and nutrition elements. The scientific name is Argyrosomous Regius and the wild Croaker is found mainly in the Atlantic Ocean and the Mediterranean sea.
Its length can reach up to 1, 5 m and its weight up to 30 kg. Given the fact of its great size, the croaker offers a wide range of processing possibilities.
